Spinach and Tortellini Salad
This spinach and tortellini salad recipe tosses cheese tortellini with spinach, Parmesan cheese, cherry tomatoes, black olives, and Italian dressing.
Ingredients
- 1 (9 ounce) package cheese-filled tortellini
- 2 cups cherry tomatoes, halved
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- ⅓ cup grated Parmesan cheese
- 1 (2 ounce) can sliced black olives
- 1 (8 ounce) bottle Italian-style salad dressing
- salt and ground black pepper to taste
Instructions
- 1Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, until tortellini float to the top and the filling is hot, about 3 minutes. Rinse under cold water; drain.
- 2Combine tortellini, tomatoes, spinach, cheese, and olives; add enough salad dressing to coat. Toss; season with salt and black pepper.
