Grilled Chicken with Honey Mustard Barbecue Sauce
This honey mustard chicken recipe grilled chicken coated in a sweet and tangy mustard barbecue sauce that makes it stand out.
Ingredients
- 3/4 cup unsulphured molasses
- 1/2 cup pure olive oil
- 1/2 cup ruby port
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 2 tablespoons freshly ground pepper
- 1 tablespoon Worcestershire sauce
- 1 shallot, minced
- Four 3-pound chickens, backbones removed and chickens cut into quarters
- 2 cups yellow mustard
- 3/4 cup light brown sugar
- 1/4 cup strong brewed coffee
- 2 tablespoons honey
- 1 tablespoon unsulphured molasses
- 1 tablespoon liquid smoke (optional)
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Tabasco sauce
Instructions
- 1Marinate the Chicken In a large bowl, stir together the molasses, olive oil, port, mustard, soy sauce, pepper, Worcestershire sauce and shallot. Add the chicken quarters and turn to coat. Let stand at room temperature, turning occasionally, for 30 minutes, or refrigerate overnight.
- 2Prepare the Sweet Mustard Barbecue Sauce Meanwhile, in a medium saucepan, combine all of the ingredients and bring to a simmer over moderate heat. Stir well and remove from the heat.
- 3Cook the Chicken Light a grill or preheat the broiler with a rack in the middle of the oven (about 12 inches from the heat). Remove the chicken from the marinade and arrange the pieces on large rimmed baking sheets. Transfer 1 cup of the Sweet Mustard Barbecue Sauce to a serving bowl. Brush the chicken quarters with 1/2 cup Sweet Mustard Barbecue Sauce. Grill the chicken over a medium-hot fire or broil, turning often and brushing with the remaining 1/2 cup Sweet Mustard Barbecue Sauce until cooked through and nicely glazed, 8 to 10 minutes per side. Serve hot or at room temperature.
