Broiled Salmon on Rice With Broccoli
Soy-glazed salmon and rice with broccoli: The broiler makes it quick, and the ingredients make it healthy, and you make a weeknight dinner look easy.
Ingredients
- 0.25 cup brown sugar
- 2 tablespoons low-sodium soy sauce
- rice vinegar
- 1 cup long-grain white rice
- 1 head broccoli, florets only, chopped (about 2 cups)
- kosher salt and black pepper
- 4 pieces skinless salmon fillet (1 1/4 pounds total)
- 1 large red onion, cut into 1/4-inch-thick wedges
- 1 tablespoon olive oil
- ground black pepper
Instructions
- 1Heat the broiler and make the glaze: Preheat broiler with oven rack 6 inches from heat. Stir together sugar, soy sauce, and vinegar in a 2-cup microwave-safe measuring cup or bowl. Microwave, stopping to stir every 20 seconds, until mixture is syrupy and reduced to about 1/4 cup, about 2 minutes.
- 2Cook the rice and broccoli: Cook rice according to package directions, adding broccoli during the last 3 minutes. Remove rice and broccoli from heat. Cover and let stand until broccoli is tender, about 5 minutes. Fluff with a fork and season with 1/4 teaspoon salt.
- 3Prep salmon and onion wedges: Meanwhile, place salmon and onion on a large rimmed baking sheet lined with aluminum foil. Drizzle onion with oil and season with 1/4 teaspoon salt. Season salmon with pepper and remaining 1/2 teaspoon salt.
- 4Broil salmon and onion: Broil until salmon is opaque throughout, 7 to 8 minutes. During the last 2 minutes of cooking, brush soy sauce mixture over salmon, reserving 2 tablespoons for serving.
- 5Serve: Serve salmon, onion, and broccoli-rice mixture drizzled with reserved soy sauce mixture.
