- 7 tbsp vegetable oil
- 1 tsp salt

- 1Cut tomatoes into wedges and slice green onion crosswise. Crack eggs into a small bowl.
- 2Beat eggs with a fork. Then heat some vegetable oil in a frying pan over high heat. Once oil is hot, pour in eggs and stir quickly. Continue to cook until eggs are set, then transfer eggs to a plate and set aside.
- 3Add a little vegetable oil to the pan. Sauté spring onions for approx. 1 - 2 minutes. Add the tomatoes and season with salt and add sugar to taste. Simmer for approx. 5 - 7 minutes on medium heat until the tomatoes are soft. Add the eggs, mix well and heat up again. Enjoy with rice!
